Roast Chicken
Chinese
Serves 4


INGREDIENTS

1 cup soy sauce
1 tablespoon gin
1 tablespoon honey
1 teaspoon salt
4 cloves of garlic crushed
1 tablespoon fresh minced ginger root
1/4 cup green onions cut in 1/2 inch lengths
1 fryer (3 1/4 pounds)


COOKING METHOD

Combine and mix together in a mixing bowl 1 cup soy sauce, 1 tablespoon gin, 1 tablespoon honey, 1 teaspoon salt, 4 cloves of garlic crushed, 1 tablespoon fresh minced ginger root, and 1/4 cup green onions cut into 1/4 inch length

Rub 1 fryer inside and out with mixture, then marinate for 45 minutes before roasting, in an oven at 350 degrees F for 30 to 40 minutes on an elevated rack.

Roast chicken should be cut into 2-inch segments for serving.


NOTES

The difference between this recipe and ordinary roast chicken is the secret blend of the marinade!
